GO Kitchen Ready was thrilled to have Chef Matt Dawes of The Bull & Beggar join us in Southside Kitchen last Tuesday October 6th. Chef Dawes volunteered his time to teach our culinary students chicken butchery. After the group practiced the art of butchering a chicken, Chef Dawes worked with the KR students to prepare a rustic french dish, “Grandma’s Chicken”, (known as Poulet Grand-mere in French), for our community lunch.
