Recruitment is open for Green Opportunities’ wait-staffing training program, Table Service Essentials. This one-of-a-kind course prepares students with the skills and hands-on experience needed to launch a career in Asheville’s thriving restaurant service sector. The training program, which begins on Tuesday, February 21, is led by A-B Tech instructor Tim Tizzano, a veteran of the restaurant service industry with over 25 years of front-of-house experience.
“Table Service Essentials provides a wealth of information and the tools to get you started as a server like no other course offers. Whether experienced or not, participants will be able to hit the floor running, or take your performance to the next level,” says Tizzano.
Table Service Essentials students will learn table-side service, the pivot system, ticket writing, and wine pouring, among other skills. Students are exposed to these essential skills through a combination of weekly lectures and a hands-on “lab” experience working as servers for Green Opportunities (GO) Kitchen Ready “pop-up” dinners.
Pop-up dinners take place on Thursday evenings in Southside Kitchen, a donation-based restaurant operated by the Green Opportunities Kitchen Ready program under the direction of Executive Chef Instructor Gene Ettison. The dinners provide a unique platform for students to practice and hone their skills in GO’s community-centered culinary classroom.
Additionally, Table Service Essentials students are eligible to receive a small stipend, an Asheville Regional Transit (ART) bus pass, case management and employment search assistance from GO staff, and the option to earn their ServSafe food handling certificate from the National Restaurant Association. Successful students will be offered the opportunity to work as servers and earn tips at other Kitchen Ready events, including lunches and caterings.
Classes will meet in the evening on Tuesdays (4-6 pm) and Thursdays (4-8:30 pm) from Tuesday, February 21 to Thursday, April 6, and will take place at the Arthur R. Edington Education & Career Center, located at 133 Livingston Street, Asheville, NC 28801.

Table Service Essentials is offered through a partnership between Green Opportunities and the Human Resources Department at A-B Tech Community College. Students who complete the program receive a certificate of completion from A-B Tech.
